Mushroom Tofu-Seitan Sandwich

Ingredients

  1. 150 g Tofu

  2. 20 g Avocado

  3. 50 g Hummus

  4. 175 g Baguette Bread

  5. 4 Large Iceberg Lettuce Leaves

  6. 50 g Tomatoes

  7. 200 g Mushrooms

  8. 1 Tbsp Coconut Oil

  9. 2 Tsp Black Pepper

  10. 1 Tbsp Ground Ginger

  11. 1/4 Tsp Ground Paprika

  12. 120 g Seitan

  13. 1 Tsp Chili Flakes

  14. 20 Fresh Curry Leaves

  15. 1 Tsp Ground Cumin


Procedure

  1. Cut the tofu & seitan in thin slices, and put them on a baking tray with baking paper.

  2. Season with black pepper, ground cumin, curry leaves, chili flakes and ground ginger.

  3. Bake in oven.

  4. Slice the mushrooms and tomato.

  5. Fry the mushrooms in a pan with coconut oil and add the ground paprika & ginger and black pepper.

  6. Slice the bread open.

  7. Spread the hummus and avocado like a paste on the inside of the bread.

  8. Add the remaining ingredients to the bread. If everything doesn't fit in the bread, put on a plate.
